When I was living in Wisconsin a few years ago there was a little food co-op that was just a few blocks from my house. I was there all of the time to pick up ingredients for dinner or to grab some food from the hot bar. I won’t say exactly how many meals I ate there a week, but it’s safe to say I was a regular. In addition to hot bar they also had single serving desserts. I tried most of their different treats during my time there, but the one I always came back to was the Chocolate Eclair Cake.
Now that the co-op is no longer a 5 minute walk from my house, it seemed like time to figure out how to recreate this dessert myself. The more traditional version is made with boxed vanilla pudding and Cool Whip, but I wanted to make this from scratch. It might take a few more minutes to prepare than the box mix version, but it’s still a pretty quick process and the taste is worth it. The homemade vanilla pudding is lightened up with a bit of whipped cream then layered with graham crackers and topped with a thick layer of chocolate ganache.
I’m happy to report that my homemade Chocolate Eclair Cake is equally as delicious as the original. The only downside is that it makes a whole pan so I don’t have built in portion control!
