I struggled for a while to find a good, healthy breakfast for workdays. I’m not hungry when I first wake up, so anything that needs to be consumed before I walk out the front door doesn’t appeal to me. I’m also completely unwilling to sacrifice sleep to wake up early and make breakfast, so my weekday breakfasts have to be quick.
During my Whole 30 last January I tried making green smoothies and I became a total convert. I’ve turned into one of those annoying people who is always bringing up how awesome green smoothies are- how the smoothies keep me satisfied until lunch and they’re full of nutrients and seriously, you won’t taste the spinach at all.
I won’t lie to you and say that you can throw several cups of kale in a blender with some random fruit and end up with a delicious concoction. I have tried a lot of different combinations of fruits and veggies. Some combos have been really good, most of them have been completely edible, and there have been a few where I had one sip and questioned my sanity for thinking I could put that much sweet potato in a smoothie.
